Discover CHEBLA, a Tunisian olive oil producer committed to quality, traceability, innovation and sustainable production since 2011.
CHEBLA presses its olive oil at Sidi Ali Ben Aoun, on Rabta Road at Km 3, in the governorate of Sidi Bouzid — Tunisia's leading olive-growing region, with 23 million olive trees spanning 307,000 hectares. The company has been crafting a story of excellence and passion there since 2011.
The mill draws its roots from the heritage and expertise of the Aouni family, deeply connected to this generous land. Mr. Samir Aouni transformed that heritage into an ambitious vision, building the venture on four pillars: quality, discipline, trust and cleanliness.
We are a producer, not an intermediary: the groves, the mill and the laboratory belong to the same company and sit within the same area. For a buyer that is not a detail of organisation — it decides how fast olives reach the press, and therefore what the oil can be classified as.
More on the region on olive oil from Sidi Bouzid.
The four pillars are not a slogan; each one has a practical consequence that a buyer can check.
Every batch is analysed in our own laboratory before release, and the figures travel with the goods rather than staying in a drawer.
The same route for every lot: harvest, cold extraction, laboratory control, filling. No shortcut when a season runs late.
What we hold is stated, what we do not hold is stated too — ISO 22000, for instance, is available on request, never presented as acquired.
Equipment, tanks and lines are kept to the standard that an organic chain requires, since organic and conventional lots are never commingled.
Every lot follows the same four steps, each documented and validated with the buyer. The oil we ship is the oil we press.
Picking at optimal ripeness, grove by grove, with lot identity kept from the first crate.
Mechanical extraction below 27 °C, with no refining and no chemical treatment.
Each batch is analysed in our own laboratory before it is released for filling.
Bulk or packed, export documentation complete, shipped under the agreed Incoterm.
Olives begin to ferment as soon as they are picked. Every hour between the tree and the press raises the free acidity of the oil that comes out, and no later stage of production can reverse it — not filtration, not storage, not blending. An extra virgin classification is won or lost in that window.
This is the practical argument for buying from a producer with its own mill rather than from a trader: our groves, our press and our laboratory are in the same place, so the interval is measured in hours. It is also why lot identity is kept from the first crate — an oil whose harvest cannot be traced cannot have its acidity explained.
The stage-by-stage account is in how Tunisian extra virgin olive oil is made.
Two iconic Tunisian varieties grow in our groves and are pressed separately: Chemlali, gentle and harmonious, with notes of almond, artichoke and aromatic herbs; and Chetoui, robust and vibrant, rich in polyphenols, evoking freshly cut grass and noble pepper. Both are available as single varietals or blended to a target profile.
Quality is verified in our own laboratory, in compliance with International Olive Council standards: free acidity, peroxide value, UV absorption and sensory assessment. Each analysis is attached to a lot number that follows the oil from olive reception through storage to shipment.
Details by subject: olive oil quality and international standards, laboratory analysis, traceability from farm to bottle and certifications.
Our objective is not volume for its own sake: it is to be a producer that international buyers can work with over several seasons, because the specification, the documents and the taste come back the same each year.
That is also what international competitions have recognised since 2023, with gold medals in Europe, the Middle East and the Americas — the list is on Tunisian olive oil awards.
Where we go from here is with partners rather than one-off orders: bulk supply for bottlers and food manufacturers, private label projects for brands, and export to markets where origin and traceability are part of the sale. The ranges themselves are on Tunisian olive oil.
